PlayFood: Spanikopita

"Handel With Care"

10 sheets phylo pastry (thawed if using the kind you can buy from the grocery store in the 
freezer dept.)
10-12 Tbsp melted butter
2 lbs fresh spinach or 1 lb frozen, cooked, drained and cooled.
1 bunch scallions trimmed and chopped
¼ lb feta cheese, crumbled
salt and pepper to taste
butter for greasing 

Preheat oven to 400 degrees F
Grease with butter a deep baking pan (2"), place a single sheet of phylo in it allowing pastry 
edges to hang over the sides.
Brush with melted butter, then place another sheet of phylo on top. Continue this way using 5 
sheets of pastry Keep the rest covered with a damp cloth so that they don't dry out.
Chop the spinach and mix with scallions, cheese, salt, and pepper. Spoon over the pastry.
Cover with the last 5 sheets of phylo, brushing with butter as before + finishing with melted 
butter. Neaten the sides. Bake 40- 45 minutes

For the ball: 40 oz spinach. 4 bunches of scallions and double the feta was used. 2 12 x 17" pans 
were used to bake them. This gave 1 ¾" pieces (~160+). Using olive oil + greasing every 2 
sheets cut the fat.
