PlayFood: Artichoke and Pancetta Frittata

"Yorkshire Square Ate"

½ lb artichoke quarters
6 oz. white onion, finely dice
2 tsp garlic (.02 lb)
2 oz pancetta, finely diced
3 tsp olive oil
5 tsp parsley, dried and chopped
2 tbsp basil, fresh chopped
1/4 tsp lemon zest
12 eggs, AA large
¼ cup cream
1 1/2 oz grated Parmesan
¼ tbsp salt
1/8 tsp black pepper

1. Sauté together the artichokes, onion, garlic, pancetta, in the olive oil until the pancetta and onions and 
just beginning to brown. Remove from heat and set aside.
2. Crack eggs in bowl and beat. Add remaining ingredients and mix well.
3. Add cooked mixture and mix,
4. Pour mixture into pan and bake in a water bath at 350 degrees for 45 minutes.

Makes 1 Frittata
