PlayFood: Bourbon Balls

"Gin Rummy"
"Happ'ly Soused"

(from 365 Great Cookies & Brownies)

2 cups vanilla cookie crumbs
1 cup finely chopped pecans
1 1/4 cups powdered sugar
1/3 cup rum
3 tablespoons apricot preserves

1. In a medium bowl, combine cookie crumbs, pecans, I cup powdered sugar, rum, and apricot preserves. 
Stir until well blended.
2. With hands, form into 3/4-inch balls. Roll balls in remaining 1/4 cup powdered sugar and place between 
layers of wax paper in a tightly covered container. Refrigerate at least 2 to 3 hours, until chilled, before 
serving. 
Store in refrigerator for up to 3 weeks.

Makes about 50 balls.
